One of Australia’s most respected and talented chefs has shared some of his secrets with Sunshine Coast cooks.
Matt Golinski spent time at James Grimes Care Centre, in Burnside, teaching Sundale’s kitchen staff some of his top tricks.
The opportunity followed Sundale’s recent donation to RACQ LifeFlight, which is the same organisation that airlifted Matt to Royal Brisbane and Women’s Hospital after he suffered severe burns in a tragic house fire at Tewantin in 2011.
An advocate for healthy, fresh, locally sourced produce, Matt taught some of Sundale’s chefs and cooks how to create four different dishes using home-made ricotta.
“I came to Sundale to have a bit of fun with food, with the cooks and chefs,” he said.
“I created some dishes that I like to cook. We started by making ricotta cheese and then turned it into four, totally different dishes, so they could see different skills and variety.”
Matt grew up in Palmwoods and went to Nambour High School.
“Driving along Currie Street this morning reminded me of catching the bus to school every day, so for me it was nice to come home,” he said.
“The whole reason I am here is Sundale’s support of the LifeFlight Helicopter Rescue, which is a cause that is very close to my heart.
“I respect Sundale’s chefs and cooks because they are feeding hundreds of people a day, all with different dietary requirements. I take my hat off to them.”
Sundale Head Chef Emma Lillie said the staff were motivated by Matt’s presence.
“It was inspiring having Matt in the kitchen,” she said.
“We have some younger chefs coming through, and it was fantastic to have someone with so much talent, teach our chefs and cooks.”
Sundale Cook Tania Guest relished the occasion.
“I was worried I was going to be a bit starstruck, but Matt is so personable and so easy to talk to. It was a fantastic session,” she said.
